Ingredients

  • 2 each Organic red beets Peeled
  • 2 each Large organic carrots
  • 1 cup Organic red cabbage Finely chopped
  • 1 each Blood orange Juiced
  • 1 clove Organic garlic Minced
  • 1 tsp Organic dijon or whole grain mustard
  • 1 Tbs Organic extra virgin olive oil
  • 1 Tbs Organic apple cider vinegar

Instructions

  • Wash and dry both the beets and carrots.
  • Peel the beets. They are messy and will dye things, so either wear gloves or just be very careful!
  • Chop the cabbage and mince the garlic. Set aside
  • Using a grater, grate the carrots and beets into a large bowl.
  • Add the cabbage and toss together.
  • Add the blood orange juice, olive oil, apple cider vinegar, mustard, and garlic and mix well to full incorporate all ingredients.
  • Taste, and adjust anything to your liking. You may need to add more blood orange juice, olive oil, apple cider vinegar, or mustard.
  • Enjoy!
