Who else has been on a beet kick lately? I must be craving them, cause I’ve been wanting them in everything! I typically have roasted beets, but I was wanted to change things up. I absolutely LOVE anything and everything crunchy, so I figured a slaw would do the trick. I honestly just used what I found around my kitchen, so please feel free to adapt this recipe to your own liking.
DID YOU KNOW that beets are particularly high in folate (a B vitamin) that promotes a healthy heart and is essential for normal tissue growth. Beets also contain phytonutrients, which are found in the pigments that make in-season produce look so vibrant in their prime. It also means that they are the most nutritionally dense during that time!
Red beets contain betacyanin, while yellow beets contain the phytonutrient betaxanthin. Coming from the phytochemical family of Betalains, both of these provide antioxidant protection. Additionally, beets may also have potential anti-inflammatory properties.
The best thing about this carrot beet slaw recipe is how quick and easy it is to make. From start to finish, it only took me about 10 minutes! This particular recipe will make enough to keep for up to a week to add to salads and what not, or is great to eat right away!

Quick and Easy Carrot Beet Slaw
Equipment
Ingredients
- 2 each Organic red beets Peeled
- 2 each Large organic carrots
- 1 cup Organic red cabbage Finely chopped
- 1 each Blood orange Juiced
- 1 clove Organic garlic Minced
- 1 tsp Organic dijon or whole grain mustard
- 1 Tbs Organic extra virgin olive oil
- 1 Tbs Organic apple cider vinegar
Instructions
- Wash and dry both the beets and carrots.
- Peel the beets. They are messy and will dye things, so either wear gloves or just be very careful!
- Chop the cabbage and mince the garlic. Set aside
- Using a grater, grate the carrots and beets into a large bowl.
- Add the cabbage and toss together.
- Add the blood orange juice, olive oil, apple cider vinegar, mustard, and garlic and mix well to full incorporate all ingredients.
- Taste, and adjust anything to your liking. You may need to add more blood orange juice, olive oil, apple cider vinegar, or mustard.
- Enjoy!
