Ratatouille is one of my FAVORITE dishes EVER. Many years ago, I worked with a French baker at the hotel I was employed at. He made THE most amazing ratatouille filling for our quiche. Many of us were obsessed with it and asked him to show us how to make it. It is SO simple and I have been making variations of it for years!
So, when I had the opportunity to create a recipe to pair with Milton’s Craft Bakers newest Gluten Free Cracker flavors, a dip variation of my favorite ratatouille using the freshest summer produce from local farms is exactly what I had in mind!
I’ve been a fan of Milton’s Craft Bakers for a few years now ever since I came across them at the Gluten Free Expo here in San Diego. They make more than just gluten free crackers and everything I have tried is really tasty! They’re also based in Carlsbad, and I love supporting local farms and businesses!

I love both flavors of these crackers, and they both are perfect for this ratatouille dip or any other dip for that matter. They’d also pair well with cheese or charcuterie, or just for snacking purposes.

Living in San Diego comes with many perks! One of those perks is having access to so many amazing local farms! I got most of my produce for this recipe from local and organic farmers, which means the flavor and nutritional value is at it’s highest. Only a few items were picked up from the store, which were also organic!
I think the thing I love most about ratatouille is it’s simplicity. The ingredients really speak for themselves in the dish! Typically, I cook it into a stew and serve it hot. In this version, I created a fresh, diced version using heirloom tomatoes that can be served chilled or hot.
Summer Ratatouille Dip
Ingredients
- 1 Yellow Onion
- 1 Yellow Squash Use 2 if small
- 1 Zucchini Use 2 if small
- 1 Eggplant Use half or whole depending on size
- 2 lbs Heirloom tomatoes
- 2 Bell Peppers Any color
- 4 Sprigs Fresh Rosemary Finely chopped
- 2-3 Bay Leaves
- 2 tbsp Herbs de Provence Or, the fresh equivalent
- 2 cloves Fresh garlic halved
- Salt to taste
- Pepper to taste
- 3 tbsp olive oil
Instructions
- First, wash all of your produce.
- Small dice the onions and bell peppers. Set aside separately.
- Remove rosemary from stems and finely chop. Set aside.
- Small dice the squash and eggplant. Keep separate from the other vegetables.
- Small dice the heirloom tomatoes and keep in their own bowl.
- Place your pot or dutch oven on the stove and turn on the heat to medium. Add enough olive oil to coat the veggies.
- Once oil is hot, add in the garlic, onions, bell peppers, and spices. Sweat the veggies for a few minutes until cooked a bit.
- Add 1/3 of the tomatoes and stir.
- Add squash and eggplant. Stir.
- At this point, you can turn down the heat slightly and put the lid on the pot. Don't go far away, as this version will cook quickly!
- Continue to stir pretty often. You want the vegetables to be cooked, but still have some texture to them (not mushy). You can add more spices at this point if you feel it needs it!
- When the mixture seems about done, add in the remaining diced tomatoes. Lightly stir and cook for a few minutes, but you want the tomatoes to keep their shape. Turn off the heat.
- Add salt and pepper to taste.
- Serve warm or chilled. With this version, I prefer it chilled! This can be made the day before!
